Because of such gastro-adventures I have often been accused of being a self-styled urbane gourmand (amongst many other much less complimentary things). A few years back I realised that I was to take my very first visit to Stratford, Ontario. With these relatively recent epicurean experiences in mind, I couldn't help but ask myself just what could Stratford, this enclave of civility, nestled upon the banks of The Avon River in Perth County, have in store for me? Three action-packed days later, when the hour eventually arrived for me to head back to the big, bad city, I was sad to leave. I had been exposed to the veritable food-lovers paradise that is Stratford, and I had fallen head-over-heels in love. Who would have By Jamie Drummond of the city’s many splendid restaurants to discover how skilled local chefs have embraced the bounty of the surrounding farmlands. From the steadfastly traditional, through warm, welcoming gastropubs, to the height of the avant-garde cutting edge, the seasonal menus of Stratford’s dining establishments exhibit levels of quality, craftsmanship, and ingenuity that I find are very rarely seen outwith large metropolitan cities. Oh, and did I mention that I believe Stratford serves perhaps the best sustainable fish and chips this side of the Atlantic? It really is no wonder that so many in-the-know diners flock to this city year after year. To borrow from Carolyn Steel, author of the acclaimed book Hungry City, Stratford’s special (and almost unique) relationship between farm and city should be known as a “Sitopia” or “food place”, from the Greek sitos (food) + topos (place). This Sitopian community truly understands that food is not only a mutual necessity but also a shared way of thinking. It is important to understand that within Stratford this culture of food heritage is not merely a nascent trend, but a way of life I believe has been evident upon any given day for well over a century. This small city’s vital connection to both the land and those who farm it is a relative rarity in our society today, and something to be truly treasured and celebrated. As I sat upon that aforementioned late-night train home to Toronto, saying goodbye to the city I had fallen into a rather passionate relationship with, one particular question began to weigh upon my mind. That quandary was the following: should I share my Good Food revelations with the rest of the world, or allow Stratford to retain its position as imagined that such a relatively small rural city would have so much going on for one in search of gastronomic adventures? Being located within some of the richest and most fertile agricultural land in North America, Stratford residents have historically had such a strong symbiotic relationship with those who work the surrounding fields, that an enviable culture of food heritage has evolved. The very best way to experience the phenomenon that is Stratford first hand is to take a stroll through the city’s vibrant Farmers’ Market, where passionate, colourful, and gregarious growers and artisans alike energetically interact with both locals and visitors. It is astonishing when one thinks that this same scene has been played out almost identically since around 1855, albeit with an ever-changing cast of players, making the market one of the oldest in Ontario. The stallholders’ wares were simply too good to pass by, with a fresh selection that by far surpassed the offerings found in urban markets. Thank goodness my hotel room was furnished with a small refrigerator that allowed me to store a plethora of local meats, vegetables, fruits, and cheeses to take back home to Toronto! Stratford’s bond with its farmers by no means ends at its historied marketplace. One simply needs to step through the doors of some one of Canada’s best-kept food-lover’s secrets? Well, I invite you to satiate your gastronomic senses, fill your epicurean mind, and satisfy your gourmand soul in one of my favorite places to be. Stratford. Sorry no credit cards. www.annamaes.ca MILLBANK 43 From the Ground Up hen I signed-on as Stratford’s official food blogger last spring (to check out my postings from the past year simply type “Local Come Lately” into your favourite online search engine) I set out to discover absolutely everything our outstanding culinary community had to offer. I found superb restaurants on every corner, ranging from sustainable seafood at Simple Fish and Chips to hip and innovative fine dining at Bijou. I was introduced to talented artisans making all sorts of incredible and creative foods, from Monforte Dairy’s innovative cheeses to gorgeous chocolates by Chocolate Barr’s and Rheo Thompsons Candies. I was impressed by a whole continuum of food education programs, beginning with deliciously fun summer camps for kids at McCully’s Hill Farm, to the super-cool high school Culinary Arts course at the Screaming Avocado Café, and all the way up to the Stratford Chefs School, one of the most esteemed chef training institutions in Canada. And I was kept busy attending all sorts of fun foodie events like the massive Soup’s On! fundraiser and the charity chilli cook-off endearingly known as Heartburn Day. W Savour Stratford Perth County But there are even more innovative and cutting edge programs that have been developed to help knife and fork artists such as myself find local, seasonal farm products to please the palate. I’m hooked on the Savour Stratford Perth County on-line product inventory, which lets me locate products based on the time of year, the particular product I’m looking for, or a particular producer. Looking for Apple Cider in February? You’ll instantly find several orchards to choose from! Savour Stratford Perth County also provides its stamp of approval for restaurants serving local fare (look for the green SSPC symbol on the front windows of your favourite dining establishments). And on the pages that follow, you’ll be directed to both guided and self-guided Edible Stratford Tours (see the visitstratford.ca website for directions and tour dates from May through October), as well as the many farms in the area providing farmgate sales directly to visitors, as indicated in their respective listings. Get out and meet the producers yourself! But after a while I realized the one thing all of these features of our food community have in common, the single resource that serves as the foundation for all the amazing table fare that I’ve encountered this year, is right under our feet: the land. As Soiled Reputation organic farm’s Antony John (aka the Manic Organic) tells people when they come to visit his wonderfully diverse vegetable growing operation, “If Perth County’s food farming conditions were compared to a wine region, we would be in Bordeaux.” In other words, the success of the sizzling culinary scene in and around Stratford can be attributed to the very first link in the food chain, which is fantastic soil. The next link in the chain consists of the hardworking farmers who cultivate the world-class ingredients that make Stratford such a special place to eat. Like the folks at Erbcroft Farm near Sebringville, whose farmgate sales connect the area’s food lovers with duck, chicken, eggs and succulent lamb all year ‘round. Or the family producers of Hoover’s Maple Syrup in Atwood, who tap their trees every spring to ensure our region remains awash in Canada’s own sweet liquid gold. And of course Perth County is renowned for its pork production, which is exemplified by the handsome pasture-raised heritage breeds you encounter when you visit the Perth Pork Products farm. In many counties, the biggest challenge is making the most vital link in the local food chain, which is that between producers and consumers. But Stratford leads the way in connecting our community with the farmers that surround us. Several Community Supported Agriculture (CSA) initiatives are in place, like the one provided by August’s Harvest Farm (whose weekly food delivery undoubtedly includes a bulb or two of their unsurpassed organic garlic). The Stratford Farmers’ Market continues to feed our city every Saturday, just as it has for over 150 years, and this year the Slow Food Sunday Market has appeared on the scene to connect the community with their high standard of “Good, Clean, and Fair” products. Savour Stratford Perth County Culinary Festival: Ontario’s #1 Culinary Tourism Experience Without a doubt, however, the pinnacle of the city’s gastronomic calendar is the Savour Stratford Perth County Culinary Festival in September. Ontario’s premier culinary tourism event (the 2009 Festival won the award for “Best Culinary Tourism Experience”!) galvanizes our community food chain by bringing all the links together – farmers, artisans, chefs, and food lovers – in the same place for one weekendlong feast each year.
